Today I am going to share a sweet quick bread that we enjoy at Christmas. It is basically a banana bread with the twist of adding cranberry sauce.
The recipe:
3/4 cup canned whole berry cranberry sauce
1 cup sugar
1 tsp. grated orange zest
1 3/4 cup flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
3/4 cup mashed ripe banana
1/3 cup oil
1/2 cup walnuts (optional)
1. In a small mixing bowl, combine cranberry sauce, sugar, and orange zest.
2. In a large mixing bowl, sift together flour, baking powder, baking soda,and salt.
3. In a medium bowl, combine eggs, bananas and oil stir well to combine.
4.Add banana mixture to dry ingredients, stirring just to moisten.
5.Stir in cranberry mixture and walnuts.
6. Pour into two greased loaf pans and bake at 325F for 1 hour or until golden brown. Cool before slicing.

The recipe I use for banana bread has nuts, chocolate chips, and maraschino cherries. I must give this a try with the cranberry sauce. That would really make it moist, I think. Merry Christmas
